You can’t go wrong with blueberries, bananas and hemp seeds.

Ingredients

  • 2 medium overripe bananas
  • 1/4 cup pure maple syrup
  • 2 eggs
  • 2 tablespoons coconut oil (or butter), melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 cup almond meal
  • 1 cup spelt flour
  • 1/4 cup rolled oats
  • 1/4 cup ground flaxseed
  • 1/4 cup hemp seeds
  • 1/2 teaspoon¬†salt
  • 3/4 teaspoon baking soda
  • 1 cup blueberries (frozen is best)

Step by Step Instructions

Step 1

Preheat oven to 350F.

Step 2

Spray muffin tin liberally with cooking spray.

Step 3

In a large bowl, mash bananas with a fork.

Step 4

Add maple syrup, eggs, coconut oil and vanilla, stirring to combine.

Step 5

Add the rest of the ingredients, except the blueberries. Stir until just combined. Fold in blueberries.

Step 6

Pour batter evenly into muffin tin.

Step 7

Bake for about 28-30 minutes or until a fork comes out clean.

Step 8

Cool in muffin tin for 10 minutes before carefully transferring muffins to a cooling rack.

Step 9

Store in refrigerator or freezer.
