Hemp and chia seed Oatmeal cookies are made with multigrain flour, oats, chia and hemp seeds.

Ingredients

  • 1-1/3 cups multigrain flour
  • 1-1/2 cups oatmeal
  • 3/4 cup coconut
  • 1/4 cup chia seeds
  • 1/4 cup hemp seeds
  • 1/2 cup dark chocolate chips, raisins or dried cranberries
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter (room temperature)
  • 1 cup brown sugar
  • 1 egg
  • 1 vanilla bean (seeds scraped out) or 1 teaspoon vanilla extract

Step by Step Instructions

Step 1

Preheat oven to 350° F and line baking sheets with parchment paper.

Step 2

Whisk together flour, oatmeal, coconut, chia, hemp seed baking powder, baking soda, chocolate chips and salt in a bowl.

Step 3

Beat butter in a large mixing bowl until smooth.

Step 4

Add brown sugar and vanilla, beat on medium-high until creamy.

Step 5

Add egg and combine well.

Step 6

Gradually add flour mixture into butter mixture on low speed. Batter will be thick. Finish off by hand mixing to ensure ingredients are well combined. Don’t over mix.

Step 7

Use a cookie scoop to get cookies same size, placing dough about 3 inches apart. Flatten slightly with a fork.

Step 8

Bake at 350° F for 10-12 minutes or until lightly browned on edges.
