These great little snack squares are perfect for packing in lunch boxes.
- 1 cup rolled oats
- 1 cup raw pumpkin seeds
- 1/2 cup coarsely chopped pecans
- 2 cups brown rice syrup
- 1/2 cup hemp seeds
- 2 tablespoons sesame tahini
- pinch of sea salt
- scant pinch of ground cinnamon
Step by Step Instructions
Preheat the oven to 325° F and lightly oil an 8-inch square baking dish.
Spread the oats, pumpkin seeds, and pecan pieces on a baking sheet and bake for 20 minutes, stirring frequently to prevent over-browning.
Transfer to a medium bowl.
Combine the rice syrup, hemp seeds, tahini, salt, and cinnamon in a saucepan and place over medium heat.
Cook and stir for 5 to 7 minutes to develop the flavors.
Spoon the mixture over the toasted oats, pumpkin seeds, and nuts and mix well to combine.
Transfer to the prepared baking dish and press gently so the mixture is evenly distributed.
Cool for 5 minutes and then cut with a moist knife into 2-inch squares.
