Crisp and bright green, with the satisfying, nutty taste of hempseed!

  • 4 cups fresh string beans, tips trimmed, cut into 2-inch pieces
  • extra-virgin olive oil
  • 1 small red onion, sliced into thin half-moons
  • 1 to 2 cloves fresh garlic, thinly sliced
  • Sea salt
  • 2 teaspoons mirin
  • 1/4 cup shelled hempseed
  • Juice of 1 fresh lemon (about 3 tablespoons)

Step by Step Instructions

Step 1

Steam the green beans until bright green and crisp-tender, about 3 minutes. Drain and set aside to cool.

Step 2

Place a small amount of olive oil in a skillet. Add the onion and garlic and place over medium heat.

Step 3

When the onion begins to sizzle, add a pinch of salt and sauté until the onion is limp, about 2 minutes.

Step 4

Season with salt to taste and add the mirin.

Step 5

Reduce the heat to low and cook, uncovered, until any liquid has evaporated.

Step 6

Remove from the heat and stir in the hempseed and lemon juice.

Step 7

To serve, arrange the steamed green beans on a platter and spoon the onion mixture over them. Serve immediately.
